Luscious Lemon Curd

Being a Florida girl I know from Lemons! Using the fattest most fragrant Florida lemons I make this velvety lemon curd using Organic Vanilla Beans from Singing Dog Vanilla and the bright sunny egg yolks from Down East Connect eggs! Wonderful with gingerbread, as a glaze on a pound cake, a topping for a buttered crumpet or scone or a happy marriage with cream cheese on a bagel-with Lemon Curd a little goes a long way!
